This Greek yogurt ranch cucumber salad is the perfect summertime side dish. It is simple to make and refreshingly, packed with many health benefits from the yogurt, dill, and cucumber. It goes well with almost everything in the summer. You can use for best results Bulgarian and Greek yogurts, which you’ll find in most of the supermarkets. If you can not find you can try to make your own yogurt.

Yogurt Ranch Cucumber Salad
Ingredients
- 5 medium Persian cucumbers or 2-3 English cucumbers (approximately 3 pounds)
- 1 tablespoon salt
- 1 bunch scallions, white and light green part only
- 1 tablespoon chopped fresh dill or 2 teaspoons dried dill
- 3/4 cup Greek yogurt
- 1/2 cup ranch dressing
- 2 teaspoons white wine vinegar
- Freshly ground black pepper, to taste
Instructions
1. First, peel the cucumbers.
2. Use a colander to place the cucumber in and add salt. Mix with the salt.
3. Leave the bowl it the sink for at about 30 minutes.
4. Use can use a paper towel to remove the extra water and then transfer to a mixing bowl.
5. Chop and add the scallions.
6. In a small bowl all the rest of the products: dill, yogurt, ranch dressing, white wine vinegar and black pepper.
7. Add to the cucumber and mix it together.
