Ingredients
- 500 g chicken breast, cut into cubes
- 1 tbsp soy sauce
- 1 garlic clove, minced
- black pepper to taste
- 1/2 cup plain flour
- oil for frying
- 1 onion, cut into wedges
- 1/2 red bell pepper cut into cubes
- 1/2 yellow pepper, cut into cubes
- 1/2 red pepper, cut into cubes
- 2 spring onions, cut long
For the sauce
- 1/2 cup brown sugar
- 2 tbsp tomato ketchup
- 1 tbsp soy sauce
- 3 tbsp vinegar
- 1/2 cup pineapple juice
- 1/4 tsp Chinese five-spice
- 2 tsp corn starch
Directions
- Use a large bowl marinate the chicken with garlic, pepper, and soy sauce. Leave it in the fridge for at least 30 minutes. After that take it out and add roll it in the flour.
- Use a shallow pan to preheat 1/2 cup oil and then fry the chicken on both sides for a few minutes until golden. Set aside on a paper napkin to absorb the excess oil.
- Use a small pan to prepare the sweet and sour sauce. Mix all the ingredients and add corn starch. Whisk gently until it thickens slightly.
- Add 3-4 tbsp water to the cornstarch and then mix it with the sauce. Cook for a minute.
- You can use a big pan or wok to preheat 1-2 tbsp oil and fry the peppers and onions for a couple of minutes until they get slightly soft. Then add the chicken and sauce and stir until the meat gets nicely coated with the sauce.
- Sprinkle with onion and serve with a side of white rice.
