Pumpkin Spiced Fall Rolled Oats

Ingredients

  • 1/2 cup old fashioned gluten-free rolled oats
  • 1/2 cup almond milk
  • 1/2 cup water
  • 1/4 cup pumpkin puree (optional)
  • 2 egg whites
  • 1 tbsp vanilla
  • 1 tsp pumpkin spice from Primal Palate
  • 1 banana
  • 1 tsp salt
  • 1/4 cup paleo pumpkin granola
  • 1 additional tsp pumpkin spice for topping
  • 1 tsp cinnamon for topping

Instructions

    1. If you choose to use the pumpkin puree - add it to a pot and boil it. Add the rest of the ingredients: oats, water, vanilla, almond milk, half the banana, salt, and pumpkin spice.

    2. After start boiling, reduce to heat to low and add the egg whites to the pot. Stir for about 2-3 minutes or until all whites are absorbed.

    3. The oats are ready when all of the liquid is soaked up. Transfer into a bowl and serve with the other half of banana, granola or you can add a tsp of pumpkin spice or extra cinnamon.
