Lentil Walnut Beet Balls with Spicy Tahini Dressing
Ingredients
- 1/4 cup vegetable broth
- 1/4 cup white onion, diced
- 1/2 cup chopped walnuts
- 1/2 cup GF old-fashioned GF rolled oats
- 1 15 oz. can of lentils, drained and rinsed
- 2 medium red beets, peeled and roughly chopped
- 2–3 carrots peeled and roughly chopped
- 1/3 c. chopped cilantro
- 1/4 tsp garlic powder
- 2 tbsp ground flaxseed
- 1 1/2 tbs sriracha
- 1 tbsp tamari lite
- 1 1/2 tbsp lime juice
- Fresh cilantro
- Black sesame seeds
- 1/4 cup tahini
- 1/4 cup filtered water
- 2 tbsp nutritional yeast
- 1 tbsp sriracha
- 1/2 tbsp lemon juice
Instructions
1. Set the oven to 350 degrees F.
2. In a pan , add a veggie broth and heat over medium. Chop the white onion and add it to the pan. Sauté for about 5 minutes. Leave it aside.
3. Using a food process for the chopped walnuts and rolled oats pulse until a solid mixture. Then transfer the mixture to a large bowl.
4. Add lentils, beets, carrots, cilantro, diced white onion, garlic, flaxseed, sriracha, tamari lite, and lime juice to the blender. Use the pulse option until everything is well mixed. Empty the blender into the mixing bowl with the oat and walnut crumble and combine it.
5. Using your hands, form balls out of the mixture, adding about 2 TBS to each ball, and place on the lined baking pan. You should have about 20 beet balls when finished.
6. Place the formed balls in a large baking pan with parchment paper on the bottom.
7. Put the baking apn in the oven and bake for 45-50 minutes.
8. Now start preparing the spicy tahini dressing: add tahini, filtered water, nutritional yeast, Sriracha, and lemon juice to a blender and blend it at a high speed until well mixed.
9. After the lentil balls are ready leave them for a few minutes to cool down and serve with spicy tahini dressing. You can sprinkle fresh cilantro, and black sesame seeds.
