Keto Egg Cups
Ingredients
- 2 farm fresh eggs
- 2 tbsp EV olive oil
- 1 cup of spinach (1/2 each)
- 2 diced yellow or orange mini sweet peppers (split in half)
Instructions
1. Add the spinach and peppers to a skillet coated with the extra virgin olive oil.
2. After a few minutes when it is sautéed add the eggs, one egg at a time.
3. Cover with a skillet lid to cook.
