Curried Cranberry Apple Pecan Chickpea Salad Cups

This Curried Cranberry Apple Pecan Chickpea Salad is a vegan, flavorful chickpea salad with cranberries and walnuts tossed with a creamy vegan dressing. It is a perfect salad recipe for any fitness enthusiast. Chickpeas has pretty good amount of 15 grams of protein and 12 grams of fiber per 1 cup. 

You also get all the health benefits from chickpeas, walnuts, apples and cranberries.

Curried Cranberry Apple Pecan Chickpea Salad Cups

Ingredients

  • 1 15 oz can chickpeas, drained and rinsed
  • 1/3 cup dried cranberries
  • 1 red or green apple, cored and diced
  • 1/2 cup lightly packed fresh cilantro, roughly chopped
  • 1/3 cup pecans, roughly chopped
  • 1/3 cup unsweetened plain coconut or almond milk yogurt
  • 2 tsp curry powder
  • 1/8 tsp garlic powder
  • juice from 1 lime, squeezed (~1 TBSP lime juice)
  • 1 head radicchio, separated into leaves
  • For serving: sliced avocado and fresh cilantro

Instructions

    1. Use a large bowl to add the chickpeas, dried cranberries, diced apple, chopped cilantro, chopped pecans, plain yogurt, curry powder, garlic powder, and fresh squeezed lime and mix them well with fork to combine.

    2. Remove some of the radicchio leave's layers to discard the tough center core and keep all remaining leaves.

    3. Use a spoon to combine the Curried Cranberry Apple Pecan Chickpea Salad into radicchio leaves.

    4. You can add on top sliced avocado and fresh cilantro.
